Baker's Mat - Silicone Baking Mat Review

I love to bake.  It's therapeutic, calming, and my way of unwinding.  I hate the clean up though.  There's nothing worse than melted chocolate chips and cookie dough chunks getting stuck to your baking sheet and having to literally scrape them off with a metal spatula before you can even think about putting it in the dishwasher.

That's the main reason I was so excited to try out the Baker's Mat, a silicone baking mat that replaces the need for cooking sprays and parchment paper.


So, it's green.  I have an overly fond attachment to anything green, and this is right up there with my favorite green kitchen gadgets.  But that is just the beginning.  I put this baby on my cookie sheet, made some ooey gooey chocolate chip peanut butter cookie dough without any protection (i.e. no baking spray) and plopped the mess right on the silicone baking mat.  I just knew that it was going to melt and ruin all of my yummy goodness, but I had to try it out.

Much to my amazement, this thing worked beautifully.  Since the cookies weren't right on the metal pan, the heat distributed evenly and my cookies turned out perfect.  Instead of transferring them to a metal rack, I just scooped up the mat out of the baking pan and set it all right on the counter.  They cooled quick and were ready to enjoy in about ten minutes, because the silicone doesn't retain heat.  

This FDA approved baking mat can go straight from the freezer to the oven, and can even withstand microwave power.  As a matter of fact, it can withstand temperatures of -40°F to 480°F.  Have some candy you want to make?  Pour it right on the mat and get to shaping!

This is seriously my newest favorite baking tool, and I think everyone should have one!

Recognizing ADD/ADHD in Young Girls

"She's so smart, I just wish she would try a little harder..."

"She's been disruptive, always wanting to play with her friends instead of paying attention."

"She keeps losing her homework, after we spent an hour working on it the night before."

"She seems to zone out, and daydreams during class to the point where we aren't sure if she's even listening."

These are just some of the things that we've been hearing for the last couple of months, and then the teacher finally called us in for a parent-teacher conference.  My step-daughter, who's 7 years old, has been disruptive, failing assignments, and completely disregarding authority.  It isn't just at school either.  Here at home, she's been forgetful, defiant, and, well, a brat.  I hate to put it in such a harsh way, but something has to give.  It's been a nightmare trying to relate to her lately, and getting her to follow directions has been nearly impossible.

I'll give you an example.  Every night at 7:30, I tell her to put on her pajamas and brush her teeth.  Bedtime is at 8 (we get up early and kids need sleep) so I give her half an hour to wind down and realize it's time to go to bed.  So, she'll go in her room, and ten minutes later come back out with pajamas on.  Without brushing her teeth.  "I forgot," she'll say.  Really?? In ten minutes time, you forgot to do one of the two things I told you to do?  "I was playing."  Ugh!

She's so easily distracted that we often have to remind her to eat during supper, because she'll drift off into daydream world and forget what she was doing.

We've tried counseling.  We've tried rigorous schedules.  I think it's time to seek profession (medical) help to see if there is an underlying problem.

That's why I've written this post.  Our thoughts are leaning toward ADD/ADHD but have hard such a hard time finding a diagnosis because girls do not exhibit the classic signs quite like boys do.  Here's a list of what to look for if you think your daughter may have an attention disorder (note: I'm not a medical professional and am just sharing what I've learned along the way.  If you have questions, please consult your child's pediatrician):

My baby girl is mobile.  Oh man, is she mobile.  You know those little wind-up toys that just keep going and going?  Yup, we're there.  And the biggest problem with an on-the-go baby is trying to get them to stop long enough to change a diaper.  You see, she isn't quite ready for potty training... but thinks she's much too big to lay down and be subjected to a traditional diaper change.  Instead, I have about three seconds to lay her down, remove the dirty diaper, and pray that I can get her wiped before she barrel rolls and scurries away with her naked little heinie flapping in the breeze.

Understandably, I was pretty excited about trying out a slip-on diaper made for a little mover.  We start our day early around here, with the alarm clocks going off at 6:30am so we can get the 7 year old ready for school, the fiance ready for work, and the two little ones ready for daycare.  That's early enough to make anyone cranky.  Then add in a baby girl that wants to scream if you try to put her on pause for the two minutes a traditional diaper change would take... UGH!

Why Mother's Day Irks Me

I got up this morning at 6a.m. to a baby screaming for her milk.  As I carried her into the kitchen, she peed through her diaper.  But of course, she still wanted her milk so I had to stand there with urine running down my side while filling her cup.  Then it was a race to the laundry room to get clean clothes for both of us, before she soaked anything else.  After cleaning both of us up, and the puddles in the floor, I finally got her settled back down.  That's about the time the three year old came out, bright-eyed and bushy-tailed, ready to play.

I think it's great that there's a holiday to celebrate Moms.  I really do.  But what changes?  If you're lucky, your hubby will get up extra early with the kids and make you breakfast in bed.  Or at least that's what they say on T.V.  Instead, he's still sleeping at 10a.m. while you've already dealt with two poopy diapers, three tantrums, and cleaned the house.

The expectations of Mother's Day will never line up with what the reality is.  Unless you're one of those Moms who's very fortunate to have one of those fantasy relationships that the rest of us dream about, you're going to be disappointed.  It's a build-up for a couple of weeks, with the commercials and the flower displays in the stores... but two days before, your significant other is going to mention that his brother invited him to go fishing on Sunday and you'll realize - Mother's Day is only important to us.  Moms, step-moms, we get our hopes up and imagine a day where we'll be catered to and taken out and pampered, but then around noon you'll realize that he's already told all his friends with kids "Happy Mother's Day" even though he neglected to tell you.

So unless you have an amazingly thoughtful man in your life who will make crafts with the kids, cook you breakfast in bed, and then take the little ones to the park so you have some alone time - Mother's Day isn't anything more than a Hallmark holiday that means you've survived another year without losing it.

How to Get a Perfect Tan at Home (FakeBake Sunless Tanner #Review)

I'm pale.  I used to use the term "fair-skinned" when I was younger, but the truth is - the only time my skin sees the sunlight is in between picking the kids up from daycare and running into the grocery store.  We're talking about the kind of skin color that should only appear in the undead movies, highlighted by a spattering of enough freckles to fill a swimming pool.  I can remember one time in my life when I had an actual tan, but that was from a week in Hawaii when I was 17.

As you can see, I was still pretty pale
My problem is that I burn, peel, and then freckle.  There is no actual tan involved in the process.  Now that I'm older, the dangers of UV rays has fully sunk in and I'm terrified of getting skin cancer.  So, I started using self tanner to achieve a healthy glow without the risks.  I'm happy to share my tips for getting a perfect summer glow using a sunless tanner.


Creamy Lemon Angel Hair Pasta Recipe

Summer is almost here, and with the 80° temps we've been having, it feels like it’s already arrived. The problem (at least in my household) with hot weather is that no one has an appetite, and I certainly don’t have the energy to whip up a five-course meal.  That’s why I love to look for simple recipes that don’t take much prep time and that are filling without being too heavy.

Today I want to share with you one of my new favorites – Creamy Lemon Angel Hair Pasta.  This meatless pasta dish has just enough lemon to taste like summer, and is an easy recipe that anyone can make!


Creamy Lemon Pasta Recipe


What you'll need:
1 Tablespoon Minced Garlic
3 Tablespoons extra virgin olive oil 
1 Tablespoons butter
16 oz angel hair pasta
1 lemon (juiced)
1 16 ounce container of sour cream
Coarse salt and pepper to taste


How to make it:

  • Add pasta to boiling water and cook as directed until al dente.
  • Heat olive oil and butter over medium heat until butter is melted.
  • Add minced garlic and stir continuously for about 2 minutes (garlic will get really fragrant)
  • Add in ¼ cup of lemon juice and remove from heat
  • Stir in sour cream and add salt and pepper to taste (I like mine with a little extra salt, but definitely taste and adjust as necessary)
  • Drain pasta and add into the sauce.   I like to add about a tablespoon of lemon zest at this point to kick up the flavor.
  • Toss together and enjoy!


This dish is also amazing as a baked spaghetti as well – to do that, I just dump everything into a casserole dish after tossing together and bake at 350° for 20 minutes.  Add a generous amount of Parmesan cheese and bake for another 5.  Top with more lemon zest!

I love to serve it with some toasted french bread and broccoli.

Fat in the deeper layers of your skin also breaks down, causing loose, saggy skin and more-pronounced lines and crevices. Too much exposure to UV rays breaks down the connective tissues (collagen and elastin) in your skin and makes your skin lose it's natural strength and flexibility.
