Easter's coming up fast, and there's so many cute ideas out there for dying Easter eggs.  I've compiled some of my favorites into one handy post, so you can create gorgeous Easter eggs with your family!


How to dye Easter Eggs

Food Coloring Method:

ADD 1 teaspoon vinegar and 20 drops of desired color to 1/2 cup boiling water. 
DIP hard-cooked eggs about 5 minutes or longer. Remove to wire rack to cool. After color dries it will not rub off.

Kool-Aid Method:

Pour contents of 1 envelope of each KOOL-AID color into separate 10- to-12 oz. container. Add 2/3 cup water to each; stir to dissolve drink mix. Use spoon to place 1 hard-cooked egg in each cup, keeping egg submerged until desired color is reached. Continue with remaining eggs. Let dry as directed in recipe.

Homemade Pizza Puffs with a Pocket Maker

Illinois... Home of the Italian Beef Sammich, the best pizza ever, weird hot dogs, and the pizza puff. Seriously - the majority of my time spent in Illinois was in small little Greek gyro shops ordering these greasy, unhealthy, absolutely amazing snacks that I can never get enough of.  When I was pregnant, this is what I craved.  But of course, living in North Carolina, they cant be found anywhere.

So what do I do?  Play around in the kitchen until I mastered the filling.  Like, not to brag or anything, but I found a combination that tastes almost exactly like the real deal.  So - I'm gonna share it with you guys.

First, keep in mind that this is not a healthy recipe.  Delicious, but not healthy in the least.  You can definitely make changes to the recipe to get a less-fattening result - such as baking instead of frying, omitting the sausage grease (more on that in a second) and finding healthier ingredients.  With that said though, this is pretty close to the scrumptious artery-clogging delectables that I love so much.

Before I get into the actual recipe though - I have to tell you guys about this awesome invention that just makes pocket-type foods so much easier to make. Kuhn Rikon sent me their Pocket Maker Set to review, and this has to be one of the coolest things ever.  They come in three shapes: a circle, a heart, and a flower.  You just press it onto your dough once you put the filling in, and voila! You have a perfectly shaped and sealed pocket-food. It comes with an awesome recipe guide for everything from pot pies to dessert pies, and all kinds of other yummy-sounding stuff!



Now with the pizza puffs, the originals are made wrapped in a tortilla and deep-fried.  The tortilla envelope kept falling apart on me so to change it up some, I rolled the dough out and used Kuhn Rikon's circle pocket maker.  First I pressed the cutter into the dough to see where the filling should go, then i topped it with another circle, pressed down on the button, and then they were perfectly sealed and ready to go into the deep-fryer!



Tortilla Recipe
 2 cups of all purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1 tablespoon lard
3/4 cup warm water

1. combine the dry ingredients
2. cut in the lard
3. add water all at once and mix with your hands, kneading as you go
this should make an elastic-y dough that holds together well as a ball.
4. roll out onto a floured surface
5. use the Pocket Maker to cut out your circles.  This recipe made about 16 circles for me - enough for 8 pizza puffs.

Filling
8 ounces cooked and crumbled mild sausage (1/2 package of sausage)
6 ounces tomato paste
2 tablespoons fennel seed
1/4 cup mozzarella cheese

1. After you have cooked the sausage, save about a tablespoon of the fat from the pan and put the sausage into a food processor.
2. Add in the other ingredients and pulse until mixture resembles a paste.  If too crumbly, add in the tablespoon of sausage grease to better hold it together

Assembly
Now here's the fun part.  Add about a tablespoon of filling to half of the circles that you cut out and use an egg wash to make the top circle stick.  Grab the Pocket Maker again and place on top of your circles, pressing the button on top.  Lift and check out the cool little seal it put on!

I put these in the deep fryer (350°) for about 5 minutes, flipping once, or until they were golden brown. Enjoy!

I've mentioned before that I am a sucker for cute little kids' clothes.  I mean, there's just something so stinkin' adorable about a dressed up baby girl or a handsome little man wearing a matching outfit. Honestly, my kids are better dressed than I am about 95% of the time.  So of course, I was extremely happy to work with Zutano for a review of a couple of their Spring outfits!

Starting New Family Traditions for Easter

Printable Tylenol/Acetaminophen Dosage Chart by Weight/Age



My poor little guy has been sick since last Thursday.  He has a bad upper respiratory infection, plus ear pain from a stopped up tube - we have to go to the ENT doctor later this week to see if she can clean it or if he's going to have to have it removed.

You know your toddler is sick when all they want to do is lay on the couch and watch TV or snuggle - so that's how our weekend went.  After having to look up a dosage chart on Google to make sure I was giving him the right amount of Tylenol, I realized - I needed a printout to hang on the medicine cabinet. When your little one is running a 103° fever, you want to help them get relief right away, not spend time on the computer trying to make sure that you're not giving too much or too little medicine.

So once he went to bed, I made this handy chart.  All the information comes from Healthy-Children.org and is cross referenced with our own pediatrician's website.  Double check with your doctor before giving any medicine, as I am not a medical professional, just a mom wanting to make things easier.

Just Say No - #NakedThursday

Did you know that one in five women suffers from depression at some point in their lives?  I'm one of them.

My dad passed away when I was 21.  Under my watch.  Under my care.  I woke up the morning of January 19th, walked right past him sleeping on the couch into the office to play on the computer - careful not to wake him up. Decided I was still tired, and went back to bed.  When I got up 3 hours later, I realized he still hadn't gotten up.  Checked on him and realized he wasn't breathing.  He hadn't been breathing for several hours.  That image, that feeling of realization - it's never left me.  I dont think it ever will.

My dad was my best friend.  He was the laughter in an otherwise gloomy day; the one who always made me feel better when I was down.  And he was gone.



I called the ambulance.  They called the coroner.  They had me step out of the room while they moved him.  The whole time I was in shock - this wasn't supposed to happen.  I mean, my daddy was supposed to walk me down the aisle when I got married.  He was supposed to spoil his future grandchildren and then turn into a crotchety old man that shook his cane at the young whippersnappers.  He was supposed to live forever - he was my superman.

That's when the idea of mortality, the idea that death is closer that we think, really hit me.  Did I start living life to the fullest?  Did I reach out to make new connections and pull those I love closer to me? No. Instead, I curled up into a metaphorical fetal position and hid from the world.  I didn't want to be here, I didn't want to live in a world that caused me pain.  I contemplated suicide; I thought that ending it would make the hurting stop.

I started a new relationship. I started a new life.  But the entire time, all I could think about was how it was temporary because I wouldn't be here much longer. I didn't want to be here.  The wounds from losing my dad were still raw, but it was more than that.  I became a recluse, this shell of a person that had forgotten how to laugh.  I'm still not sure how I functioned.

For those of you who are lucky enough to not have ever experienced depression, let me tell you what it's like.  When you're depressed, you're a victim of your own mind.  You have this criticizing little voice inside your head that won't let you be happy, because for some reason you don't deserve happiness.  But it isn't all about being sad.  No, it's more like a lack of emotion.  You can't feel anymore.  There's this numbness that sets in, this void of cataclysmic darkness - but you're at home there.  You're welcome in this hole in yourself, and stepping out of that safety zone is scarier than the idea of getting lost in it.

Depression isn't a choice, depression is an illness.  I can't step out of it, I can't shake it off, I can't control it.  I compete with the depression, the anxiety, the hopelessness with medication, but it's always going to be there, lurking behind my happy thoughts, threatening to take over again one day.  
I can, however, say no.  When those suicidal threats loom over me, when I want to disappear, I can look at my babies' faces and know that I do have a place in this world.  While I can't erase the thoughts that depression puts into my head, I can just say no to the way it wants to consume me.

Doctors Who Make a Positive Impact in the Life of Their Patients

Throughout the United States, initiatives have been put into place that have yielded positive results when it comes to attacking obesity. The positive results that these initiatives have had can be seen when examining the statistics related to obesity in the United States throughout the years. The year 2014 was significant as the first year when the United States did not rank as the most obese country in the world. These statistics reflect a positive trend that is being seen among both the young and adult population. People are becoming more health conscious as they see the negative effects obesity has on their health.

The medical community has always been encouraging people who are overweight to take steps to reach their target weight. They have worked closely with patients in designing diets, reasonable exercise, and at times offering supplements designed to help people successfully get their weight under control.

Telemedicine jobs are attracting many physicians who are interested in taking a long-term role in helping their patients improve their lives. These jobs allow physicians to offer weight loss advice and weight loss treatment to their patients no matter where their patients are within the country. The results of telemedicine speak for themselves. In a little more than a decade, over 100,000 patients have been helped by the services provided by companies like ATIMAP for example.

The doctors and physicians who work in telemedicine have a sense of accomplishment when they see their patients reach their target weight goal and have happier and more successful lives.

Potty Training Guide for Girls

Oh talk about bittersweet - My not-quite-two-year-old baby girl has started the potty training thing.  It's going really well too, which means that soon we'll no longer need the diapers. But it means she's getting bigger and more independent and I'm really not sure if I'm ready for that yet.  She's my last baby; we wont be having anymore little ones, so my diapering days are numbered.

Getting her to use the potty was so much easier than with her older brother.  Everyone keeps telling me, "Oh girls are easier to potty train," but I'd like to think that the trial and error with the Sammy-man really helped me know what to do this time around.
Here are some of my best tips for potty training a girl.



Reward Method for Potty Training


Now this is the one that you hear about the most, for good reason. Positive reinforcement is the most effective way to teach a child a new skill.  If you want to ensure that your little one wants to use the potty, you have to give something back.

How to Positively Reinforce Potty Training


  • Praise - yup, that clapping and the "yay big girl!" and potty dancing, those are all means of helping build your little girl's self esteem while showing them how proud you are of their achievement. When they let you know that their diaper is wet, up until they successfully complete the entire potty training, it's important to encourage them with with praise.  Accidents will happen, be sure to keep the upbeat attitude and try not to show disappointment - it isn't a failure, just a learning moment!
  • Treats - this one is pretty self-explanatory, and tends to be the advice I hear most often.  My sister used M&Ms when potty training her little girl, and at daycare they use stickers and stamps.  Giving a treat of some kind, or doing something special with your little one, when they use the potty is a great way to reinforce the behavior you want them to exhibit.  The only downside to giving treats as a reward is that they will come to expect some kind of candy or sticker every time they use the potty, and there's times when Momma forgets the sticker book at home when in public.

Tips for Successful Potty Training a Girl


1. Show your daughter how to use the toilet.  They're going to follow you into the bathroom anyway when you're expecting a little bit of privacy - instead of getting frustrated, try explaining what's going on.  Tell her the steps for what Momma is doing, and let her help flush.  Kids are visual learners; you can't expect them to just know what to do.

2. Don't expect them to tell you when they need to go.  At the beginning of potty training, most little girls are still figuring out what certain sensations mean.  Try taking her to the bathroom every 15-20 minutes and letting her sit on the potty, then give her praise when she "goes" - she'll figure it out!

3. Go pants-less.  Or you know, at least put a pull-up diaper or something that is easy for her to remove. This is the age where they want to be as independent as possible, and making her depend on you to take her diaper off will only slow her down.  If you're worried about puddles - read on:

4. There will be accidents.  Go ahead and accept this.  Put a potty chair in the living room, or play room, and put down a towel or something.  Puppy pads?  It doesn't matter, as long as you relax a little and expect to clean up the occasional puddle.

5. Make sure she's ready.  Maybe this should have been the first tip, because I think it's the most important.  Your little girl isn't going to be ready to potty train, unless she wants to.  It will just get frustrating for the both of you, and might make it take longer.  When she shows discomfort as soon as she wets her diaper, when she starts stripping in the middle of dinner because she doesn't want a diaper on... she might be ready to start.  Until then, showing her the ropes is a great way to introduce it to her without forcing it on her.
