With three germy little kids going to germy little schools with other germy little kids, the sniffles and sore throats are running rampant here at my house. Chicken Noodle Soup may not be a miracle cure for the common cold, but there's just something about the flavors and the nice warm soup that just seems to make you feel better after a bowlful. 


Usually, when I don't feel good, I'll just pop the lid to some canned chicken noodle soup and heat it up, but when it comes to my kids not feeling well, I try to make them something with a little more nutritional value and some love. This homemade chicken noodle soup has everything you could want in a soup - the hearty veggies, the delicious broth, the roasted chicken... It's the perfect go-to for a quick pot of feel-good yumminess.

Homemade Chicken Noodle Soup with Egg Noodles

Delicious homemade chicken noodle soup with egg noodles and vegetables.

Ingredients

- 2 cups shredded cooked chicken
- 2 large carrots, diced
- 2 stalks celery, diced
- 2 Tbs butter
- 1 large yellow onion, diced
- 1 clove garlic, minced
- 1 1/2 cup egg noodles
- 64 oz chicken stock
- 1 tsp parsley
- 1/2 tsp basil
- 1 tsp salt
- 1 tsp pepper


Directions

- In a large pot, melt butter over medium heat and add in the vegetables. Cook until just tender (about 5 minutes) and add in the minced garlic.
- Continue cooking and stirring until garlic begins to turn a light golden brown (about 3-5 minutes)
- Add chicken stock, seasonings (more or less, depending on taste), and egg noodles
- Bring to a boil and then reduce heat back to medium/medium-low and allow to simmer for 15 minutes.
- Add cooked chicken right before serving.

Being a parent in the age of the Internet must be tougher than for parents before the Internet came along, right? Well, that may be pushing it a bit, but it can certainly cause a lot more anxieties for us now. Most parents lead extremely busy lives and finding the time for everyone to sit down as a family is a lot more difficult now as both parents need to work in order to keep a roof over their family’s heads. So, how can we feasibly keep an eye on what our kids are looking at online, or work to reduce their reliability on the dreaded tablet or smartphone?
Impose A Time Limit

This is usually the first port of call for any parent, and it works better on the younger children, but you are still in for a battle. By allowing them some screen time after they come home from school/playgroup, it is early enough for them to get some quality downtime before the evening meal, and the blue light emitting from the screen won’t affect their sleep. If you are worried about their quality of sleep but aren’t able to get them off the screen until it’s time to sleep, you can install a light filter like F.Lux. Two hours is an adequate amount of time to play their games before their evening meal, and by setting some simple rules, like not having the tablet at the dinner table, you are getting some proper family time in for once!
Take The Surveillance Route
It will be interpreted as spying by your kids, but by looking at their web history, you can get an idea of what sites they look at, and if they are of a questionable nature. If you find that they are looking at inappropriate sites, then you can install web filtering software. Not just a site blocker, but a lot of software now has the ability to set time limits on the usage and has options such as report generating and even a panic button!
Understand That It’s Not The Root Of All Evil Anymore

According to a new study, it appears that 6 hours of screen time per day is not a cause for concern in comparison to a few years ago and that it is woven into our fabric as a constant now. While we may have many struggles in wrestling the tablet or phone away from our children, we can now take comfort in the fact that it isn’t as bad for them as we once thought. The question to ask yourself, as a parent, is if it is the cause for any of their problems, either at home or at school? If their grades are slipping, and they appear a husk of their former self, then it would be time to step in. As long as your children are eating well, exercising, and sleeping properly, then having a bit of screen time in suitable hours may actually do them some good.

A Lack Of Appetite

Easy Homemade Low-Bean Chili


I've never really been a fan of thick chunky chili. Ok, let's be honest: I'm almost as picky with textures in food as my kids are. I love the taste of chili but kind of avoid beans at all costs. There's just something about the dry weird texture to them that I never could get over. 

My fiance, on the other hand, loves chili and beans and all southern foods. I compromised on this dish, a low-bean chili recipe that is probably a little closer to a hearty soup than chunky chili. I made it back in December for a family gathering (my son's birthday) and it was a huge hit. I was a little surprised that everyone loved it so much, considering that it really isn't your traditional chili. It is packed with flavor, though, and great for cold evenings.

The trick to making this chili is to add the ingredients in a specific order, otherwise, you'll end up with a watered down chili-flavored bean soup. Not recommended!

First, I dice up a medium yellow onion and toss it into a big pot over medium-high heat. Once they start sweating a little bit, I throw in a pound of ground chuck. I brown the beef, stirring often with the onions, and then drain off the grease. 

Before adding the meat/onion mixture back into the pot, though, I dump in a can of fire-roasted tomatoes and the chili seasoning. I let that simmer for 2-3 minutes, then add in the meat mixture. That has to reduce down a little bit, to give the meat the smoky tomato and chili flavoring, and then I add a can of tomato sauce, two cans of chili beans (in chili sauce) and one can of drained & rinsed dark red kidney beans. I also add in 1/2 cup of water at this point and mix it all together before reducing the heat and letting it slowly simmer for about 15-20 minutes.

You're probably wondering how I eat chili without eating beans, aren't you? Even Matt looks at me weird when I get a bowl! I usually use a ladle to scoop up meat, onions, tomatoes, and lots of sauce/broth while leaving the beans behind in the pot - then add lots of sour cream and cheese and use it as a cracker dip. Probably one of my favorite foods of all times. And yes, I know I'm a little odd - but you can't knock it until you try it!

Easy Homemade Chili Recipe
A low-bean chili packed with lots of flavor
Ingredients
- 1 Medium yellow onion, diced
- 1 lb ground beef
- 1 can fire-roasted tomatoes
- 1 can tomato sauce
- 2 cans chili beans (pintos) in chili sauce
- 1 can dark red kidney beans, drained and rinsed
- 1/2 cup water
- 2 Tbs Chili Seasoning (You can use a packet, but I prefer this recipe)

Directions
- In a large pot over medium-high heat, add diced onions and begin to sweat them. Add ground beef and brown. Drain and set aside.
- Pour in fire-roasted tomatoes with juice into pot and add your chili seasoning. Let simmer/reduce for 2-3 minutes before adding the meat/onion mixture back in.
- Reduce heat to medium and add in remaining ingredients, stirring to combine well.
- Cover and simmer for 15-20 minutes, stirring occasionally.

*Notes: Best served with sour cream, shredded cheddar, and thinly sliced green onion, although the cave man puts mayo in his. (He told me to tell you guys it's awesome, if you like that kind of thing)

Five Ways to Get Children Excited About Gardening

Children can be very finicky about eating their vegetables, causing a struggle between them and their parents at every meal. One easy way to get them to eat their vegetables more easily is to get them excited about gardening. It'll get them connected to their food by participating in their growth from seed to harvest. Many children are surprised to learn that grapes grow on the vine and that carrots are the plant's root.

I've taken the time to ensure that my kids know where their food comes from. Last summer, my 4-year-old son harvested kale from the garden for the first time, eating much of it in the process. He was very proud of his little corner plot in the garden and often would offer tomatoes to the neighbors as they passed by.


Kids learn best through hands-on experiences, and they love to explore. Taking advantage of their natural curiosity is one way to build an interest in gardening. Here are five tips on how to make healthy gardening fun for kids.

Start by sectioning off a good plot for them with plenty of access to the sun. Each of my children has their own personal garden bed to tend. Their plots have rich soil and plenty of light. The idea is to set them up for success. I help my children do a little weeding every now and again since they are so young, but I want their gardening experiences to be both positive and realistic. 

Avoid the temptation to give them too much space for their plots. It's easy to get swept away in the excitement, but a child's garden plot needs to be of a workable size. They need to be able to take care of the planting, weeding, and harvesting with minimal help. The size of the plot will vary by the age, level of maturity, how much time the child has available for gardening, and the child's attention span.

Choose plants that are fun and easy to grow. Again, this is to improve your child's chances of success. These plants will vary by climate, and some will grow more easily than others. Cherry tomatoes and snap peas are favorites in our house. They are harvested early in the year and are easy for little fingers to grab at harvest time. 

Adding a fountain to the garden can be also a great way to create interest for children. Though a traditional fountain can really help as it allows you to add fish, even a wall fountain such as these from Outdoor Fountain Pros can be a good addition. 

Cucumber plants are also a good choice for children, as are pumpkins, squash, and gourds if you have enough space. These last three have the added bonus of helping to teach the children patience as they were for the plants to mature. Here are some good tips.

Do your best to follow your child's lead. I am more of a facilitator in my approach to gardening with my children. This allows them to develop their own inspiration. My daughter loves flowers and wants to plant some, but I'm more practical and would prefer to focus on vegetables. If I insisted on my way, she'd likely lose interest in gardening. The trick is to find a balance. 

Use the fruits of their labor to prepare a healthy lunch. My children are thrilled to be contributors to our meals with vegetables they harvest from their garden plots. It's also a very wholesome way to get them motivated to keep their garden plots maintained when the summer weeds start to pop out. I often plan meals around whatever veggies they are currently harvesting. 

My children are thrilled to eat the vegetables they've nurtured from seed. You can inspire your own children to want to garden when they see how excited you get at each step of the gardening process, from preparing a plot, to planting seeds, to harvesting veggies. In time, your children might even start begging for you to cook vegetables they've harvested from their own plots. Mine do!

Shout out to all the moms out there: you don’t need to sacrifice yourself for your children! For some reason, there’s an unspoken belief that a mother becomes her kids. She doesn’t need to worry about her life anymore because she is living for them. Of course, every mother does live for her children. But that doesn’t mean she can’t live for herself as well. If you’ve been struggling to keep up with your self-care, it’s time to make a change. In truth, a mother who looks after her well-being puts herself in better stead to raise her kids. But, how do you achieve the balance? Here are a few ideas!

DO SOMETHING FOR YOU

Have you done anything for yourself since your children were born? If the answer is no, it’s crucial that you do! Taking one night for yourself each week is not the crime you’ve convinced yourself it is. Far from it. Knowing you have that night to yourself will allow you to return to the family unit refreshed. You’ll feel better for reclaiming your space in this way. What you do is irrelevant. Join a class and learn something new. Participate in a book group and immerse yourself in adult conversation. Or, go out for drinks with girlfriends. Whatever you choose, make sure to keep it a kid free zone. You deserve it!

You may not think you have time for creativity, but we can all make time for the things we love. Instead of watching television in the evenings, get into the habit of a creative hobby. There are many reasons creativity can return you to yourself. Getting in touch with your artistic impulses will help you access your mind in a way you haven’t for a while. It can be satisfying and eye-opening. From knitting to writing poetry, decide which creative pursuit would suit you!

Another unspoken belief that haunts moms is that we can’t care about our appearance. It’s just not true! Again, taking an effort in your appearance will improve your mood and make you a better mother! Not to mention that you’ll look fantastic. Have you been hiding your body since the birth? When the children are tucked up safely in bed and are fast asleep, it is time for us - as parents - to relax.
